Today I ran across some really nice and fragrant looking red plums at the market, and decided to do a little experimenting. It turned out great, and everyone loved it.. perfect for warm nights and dinner parties. Light, fresh, and very easy to make. Get after it, y'all!
BROILED PLUM AND CUCUMBER CAPRESE
5 Red or Black plums.. firm, not too ripe.
1 English cucumber, shaved into thin ribbon with a vegetable peeler
Fresh mozzarella sliced about 1/4 inch thick
ITK's JEZEBEL Sauce
Fresh Basil, rolled and cut into ribbons(Chiffonade)
Finely chopped pistachio
Light fruity olive oil
1. Slice the plums in half, and remove the pit. Fill the center of the plums with a spoon full of Jezebel sauce, and broil in the oven 10-12 minutes or until the top start to caramelize, and the plums soften. Remove and chill.
2. Peel the cucumber, and continue along evenly with the vegetable peeler, cutting long thin cucumber ribbons. Peel until you reach the center seeded portion of the cucumber. Place in a bowl and keep cool.
3. Bring out your sliced Mozz. On a platter or individual plates, start building your caprese. Either stack, or shingle. You're the Chef now, plan your design. I shingled in a serving bowl... mozzarella, plum, mozzarella, cucumber, mozzarella, plum etc.
4. Garnish the top with a little drizzle of Jezebel Sauce, and your basil chiffonade. Drizzle a little olive oil on top and sprinkle with fine chopped pistachios.
serve right away. Enjoy!
