1 recipe basic pie dough or ready made pie crust
1 fluid cup fresh Meyer Lemon juice
1 tablespoon Meyer lemon zest
8 large eggs, 3 left whole the remaining 5 separated
2 cups sugar
1/2 cup cornstarch
1/4 teaspoon kosher salt
2 tablespoons butter
3 tablespoons heavy cream
- Preheat your oven to 400 degrees. Prepare your pie dough (store bought or homemade) and roll out into your favorite pie plate. Press into the bottom and sides. Roll up the edges and crimp in your favorite fashion. Place an oiled sheet of aluminum foil or parchment paper inside the pie plate on the dough and add dried beans or rice or pie weights. Blind-bake the pie shell in the oven 12 -15 minutes (or according to the prepared pie dough instructions) until lightly golden. remove the pie shell and the paper with pie weights and cool.
- In a mixing bowl combine three of the eight while eggs. Separate the yolks from the whites of the remaining five eggs. Cover the five egg whites and set aside letting them come to room temperature. Beat the three whole eggs, then add the five egg yolks and mix in well.
- In a large sauce pot combine the sugar, cornstarch, and salt together. Add the Meyer lemon juice and lemon zest to the beaten eggs and pour into the cornstarch/sugar sauce pot. Mix to combine evenly and begin heating slowly on the stove top. Stir constantly with a heat resistant rubber spatula scraping the bottom and sides of the pot. Add the vanilla and heavy cream and keep stirring and cooking. Cook the filling until thickened and remove from the heat. Fold in the butter until meters and mixed in well.
- Pour the lemon filling into the cooled baked pie shell. Let set out until cooled, and cover the lemon curd surface with plastic wrap. Place in the fridge and let cool completely before adding the meringue.
For the Meringue
5 large egg whites
1/2 teaspoon vanilla extract
Good pinch of salt
1/4 cups sugar
7 ounces marshmallow cream (about a cup)
Whip egg whites until fluffy. Slowly sprinkle in a a bit of the sugar and keep whipping. Keep going until all the sugar is used
Add in the marshmallow and continue whipping until light peak stage
Spread the meringue on top of your pie, making sure the meringue reaches/touches the inner sides of the pie crust and make all pretty like. Like how I said that? Bake in a 400 degree oven until lightly browned. Let cool and serve. Enjoy!!
