Green Tomatoes! Green tomatoes from Arctic Farms which are hydroponically grown, and r the most beautiful and beautiful tasting green tomatoes out there. Since I discover them through The coop three months ago.. maybe four. I have continuously ordered them. Now they have other great produce, including butterhead lettuce which I also love, but by far my favorite has been their green tomatoes.
Yesterday our orders were ready for pick up, and today I made this salad. Huge happy smiles all around! It was a perfect salad and perfect for this time of year. Summer grilling at the lake or for summer holidays? Make this salad.

Serves 4
Ingredients:
1 pound green tomatoes, sliced and cut into thin strips (julienne)
8 ounces tomatoes, large dice
5-6 green onions, chopped
15 ounce canned black beans, drained and rinsed
1 large Poblano pepper, seeded and diced
2 tablespoons cilantro, chopped
crumbled Queso fresco or Feta
Make:
Prep all of the ingredients and add to a non metallic mixing bowl. Give it a good toss, add the dressing, toss again, cover and chill. Let the flavors meld and develop in the refrigerator at least 20 minutes. Garnish with crumbled queso fresco or feta cheese.
For The Honey Lime Dressing
1/4 cup fresh lime juice
1/2 teaspoon fresh lime zest, microplaned
3 tablespoons Honey
1/4 teaspoon In the Kitchen With Scotty “Cook’s Line Seasoning “
pinch of ground chipotle pepper or cayenne pepper
1 teaspoon ground cumin
1/2 cup grapeseed oil (or light olive oil)
Real Easy: Pour and or add all over the ingredients in a glass jar that has a screw top lid. Shake like hell. Pour over your salad. Boom……….Done.
