Sunday Baking: When Mother Nature thinks she’s funny, it’s cold, gray, and you have the right ingredients without having to run to the store. Banana (Half) Sheet Cake with Mascarpone Buttercream Frosting for the win! Take that, Mother Nature!
Banana (Half) Sheet Cake with Mascarpone Buttercream Frosting
1 cup All-Purpose Flour
1 cup of sugar
1/2 teaspoon baking soda
1/4 teaspoon Kosher salt
1/4 teaspoon ground nutmeg
2 ripe bananas, mashed ( at least 1 cup)
1/3 cup ( 5 tablespoons) unsalted butter, melted
1/2 cup buttermilk
1 large egg white (no yolk)
1 teaspoon vanilla extract
Ripe banana for garnishing
Toasted halved walnuts, optional
Mascarpone Buttercream Frosting
8 ounces mascarpone cheese, softened
1/2 cup (1 stick) unsalted butter
1/8 teaspoon kosher salt
3 cups powdered sugar
Preheat the oven to 350 degrees. Butter lightly a 13x9x1 half sheet pan and set aside.
In a mixing bowl mash your bananas to a pulp and add the sugar and vanilla. Mix by hand until the sugar has dissolved. Add the egg white and buttermilk and continue mixing until thoroughly combined.
In a larger mixing bowl add the flour, baking soda, nutmeg, and Kosher salt. Mix with a spoon to combine.
Pour the banana mixture into the flour mixture. Add the melted butter and mix the batter to a smooth consistency.
Pour the batter into your prepared half sheet pan. Smooth out evenly, place in the oven, and bake 15-18 minutes or until the cake has thoroughly cooked in the center.
Remove your sheet cake from the oven and allow to cool through in the pan. While your cake is cooling, in a mixing bowl add the softened mascarpone cheese. Add the room temp butter and mix the two until smooth.
Add one cup of the powdered sugar and blend in until smooth. Add the second cup of powdered sugar along with the salt and mix. Add the final cup of powdered sugar, mix, scarped down the sides and bottom of the bowl, and mix yet agaiiiiiin until you have a nice frosting consistency.
Spread the frosting on top of your sheet cake. Add sliced bananas and walnuts for garnish. Slice the cake into 12 equal sized portions…. Or just grab a fork as I did. Heaven!
